Summer Punch with Pimm’s, Strawberry and Earl Grey Syrup
When the girls at hey-ruby.com reached out to me and asked to create some lovely summer cocktails for their vintage agency party, I instantly knew it had to be something Pimm’s.
It’s not a secret that Pimm’s is my absolute favorite summer drink (and with Champagne, I can drink it all year round) and this summer punch with Pimm’s, strawberry and earl grey syrup was waiting on my list for so long. Ruby’s office party was just the perfect reason to finally test it out.
Making my own syrups is something I really enjoy. Since I love to watch what I’m eating and go organic whenever I can, it s a great opportunity to take care that everything in my cocktails is fresh and of good quality.
The strawberry and earl grey syrup is actually pretty simple to do. I used frozen strawberries, what was just more convenient. Afterall I had to make cocktails for 60 guests, yeah, right a lot of Pimm’s punch it was!
You can use fresh strawberries for the syrup too, for the punch itself I would use fresh ones whenever possible.
I have to admit that I’m not a huge fan of earl grey, I definitely never order it when attending an afternoon tea, but hey, I love to try out new things and mixed with alcohol almost everything tastes better. Turns out, as a strawberry syrup in a lovely Pimm’s punch, it works great.
PIMM’S PUNCH WITH STRAWBERRY & EARL GREY SYRUP
- 1 1/2 lb strawberries
- 1 organic lemon
- 1/2 lb sugar
- 2 tbsp earl grey tea leaves
- 1/2 cucumber
- 5 fl oz Pimm's no1
- 33 fl oz soda water
- few mint leaves
- few ice cubes
wash the strawberry and cut of the stem base. Cut the strawberries in cubes.
for the syrup: use 2/3 of the strawberry and add half the lemon juice, keep the other wedge for the punch bowl.
add sugar and tea leaves and bring to boil. Simmer for around 5 minutes on small heat until you have syrup. Strain it and let it cool down.
for the punch bowl: add the other 1/3 of the strawberry to a large glass bowl. Also, wash and cut the peeled cucumber and lemon and add it to the bowl.
pour over the Pimm's and let it sit for around 30 to 45 minutes.
add the syrup, mint and soda water. Serve with a view ice cubes & enjoy!
The party was a great success, and when I looked into the empty punch bowl at 4 am, I guess so was this summer punch with Pimm’s, strawberry and earl grey syrup.
It looks like there has been Pimm’s o’clock all night long at Ruby’s.
